Engraving vs. etching is a distinction most shops blur, and plenty of quotes are apples-to-oranges because of it. One shop bids a quick surface etch, another bids a deep engrave, the prices differ by 3x, and the customer concludes somebody is gouging. Nobody is. They quoted different processes and called them the same word.
The three terms sort by depth.
Marking
The laser changes the color of the surface without removing anything. On stainless this is annealing: heat builds a permanent dark oxide layer while the surface stays smooth and sealed. Depth is effectively zero, and that’s the feature, since a sealed surface gives corrosion nowhere to start. Knife blades, medical tools, and food-contact parts want this one.
Etching
The beam melts and lifts the very top of the surface, leaving a shallow, textured mark you can just feel. Under 0.001 inch in most cases. It’s fast and high-contrast, which makes it the default for tumblers, plaques, awards, and logos on panels.
Engraving
Material is vaporized to a measurable depth, from 0.001 inch to several thousandths. You can catch it with a fingernail, it can be re-darkened or left bright on metal, and it’s what compliance work demands. The ATF’s firearm marking requirements specify 0.003 inch minimum, which is an engraving spec, not an etching spec, and a shop that doesn’t know the difference shouldn’t be doing that work.
Heavy-wear items want engraving too. An etch on a tool that lives in a gravel truck will polish away over the years. A deep engrave won’t.

Older processes
Chemical etching (masks, acid baths) still exists in industry, but the laser beat it for small runs on detail and cleanliness. Rotary engraving physically carves with a spinning cutter, and it retains a place for certain deep industrial work, but it can’t match laser detail and it struggles on hardened steel.
